Albondigas Soup, the Mexican version of Meatballs Soup is hearty, flavorful and super satisfying. This Albondigas Soup recipe is made with lean ground beef and rice meatballs with lots of vegetables in a savory and light broth.
Albondigas is the Spanish word for meatballs. In this soup recipe the tender and juicy meatballs are made with ground beef and rice and are seasoned to perfection. Although traditionally this dish is made with ground beef meatballs, you can use ground chicken or turkey.
Home Made Albon Recipe
Your albondiga soup or meatball soup is most likely greasy because you are making this recipe with regular ground beef with a 20 to 30% fat content. To prevent a greasy soup, using lean ground beef with less than 15% fat, is a must.
Although we usually think that ground beef with higher fat content (20% to 30% fat) equals more flavor, not all recipes benefit from fatty meat. When making albondigas soup, perfectly seasoned meatballs made with lean ground beef are cooked directly in the flavorful hot broth resulting in an incredibly flavorful dish.
The meatballs recipe that I am going to share today is much different from the Italian meatballs that you are probably used to, and which are also delicious. If you are looking for a more traditional meatball, check out this one made with ground bison and cheese.
There is nothing like eating a homemade meal made by mom. Without a doubt, it is one of my favorite memories from growing up and as time goes by, I have realized how important those moments were. There is just something about a home cooked meal that makes it so delicious.
Maybe it is being able to enjoy with family, or the love that it is made with, or maybe just simply having fresh ingredients. Whatever it is, I think we can all agree that home cooked meals are best.
The best part for me was to pull up a tall stool and sit next to them to form the meatballs (or albondigas) for this recipe. It was always so much fun and I also was able to learn how to make these Mexican meatballs.
My recipe for Mexican meatballs, or albondigas Mexicanas, are made with a combination of beef and pork. The meat is then mixed with a variety of seasonings and white rice and then cooked in a tomato-chipotle salsa. The meatballs are cooked in the salsa along with potatoes, carrots, and/or squash.
I have made this recipe 3 times now. They are absolutely amazing meatballs!! The rave reviews are constant.(I had never made Mexican meatballs before and the third time was for a Mexican family for Christmas.) I'm so happy!!
Albondigas is a very traditional Mexican meatball soup. With the carefully crafted meatballs, bountiful vegetables and rice you will be more than satisfied. I fondly remember my grandmother rolling out each little meatball. I always wondered how she managed to make every miniature meatball the exact same size. Next time you want the perfect cold weather meal, try a hefty serving of albondiga soup, a tall pile of freshly made corn tortillas, and a little salsa casera. Aye que bueno.
Use the recipes as a guideline. I tend to like more spices in my recipes than my Mom ever used, but that is the fun part of the cooking process. Make a recipe your own, make memories with your friends and family. Enjoy the process. And most importantly, enjoy home cooked meals! Priceless! Every time I post about albondiga soup people ask me about the mint. Many traditional albondiga soup recipes call for adding yerba buena(mint) to the meatballs and a little to the soup base. I honestly do not remember my Mom adding mint, but I certainly am willing to give it a try! I am actually preparing some this week with the mint. I will update with pictures! See Video at the end of blog post!!

Mr. John, I don't have time to read the posts that often, but I am interested in your post. I have never used corid on dogs, but have with calves, and with good success. I use the old recipe for homemade albon on my puppies and it works great, or has in the past. Let me know how the corid works, if you go that route and the dosage for pups. Thanks
corid will kill cocidia but cant remember the dosage , sulfiadimentox sold out of Jeffers is the best for cocidia, its what albon is made of a lot stronger than albon and works a lot faster sometimes overnite ! I believe sour feed has a lot to do with cocidia

Albondiga means meatball in Spanish. In Mexico, we eat a lot of albondigas (meatballs). There are many types and different recipes. There are meatballs in clear broth, tomatoes-based broth, meatballs stuffed with cheese, rice, vegetables, and even hard-boiled eggs.
If food allergies are suspected, your veterinarian will recommend that you feed your pet a single, unique protein diet exclusively for 8 to 12 weeks. Only a veterinary prescribed prescription diet or a homemade diet will meet this allergy food trial criteria. Even though there are numerous over-the-counter labeled single protein source diets at pet and grocery stores, these diets are frequently contaminated with other protein products by virtue of how they are processed.
While traditional albondigas soup is made with ground beef (and sometimes pork or sausage or a combo thereof), I went the ground turkey route this time around. I add a couple tablespoons of oil to the turkey meat in order to ensure there is enough fat content for the meatballs to hold together and be nice and flavorful.
"For as long as I can remember, every Christmas Eve I've hosted an open house with a Mexican buffet," writes Jill Cole of Fallbrook, California. "Any suggestion of varying the meal is met with cries of protest from family and friends. I set out guacamole, salsa, homemade tamales, and what has become my famous albóndigas soup."
I made this soup tonight and it was delicious...very light, but filling. We also made your salsa recipe to add some extra spice to the soup. It was the perfect dish for this cold CO night. Added bonus, my almost two year old ate every drop of his serving!
British people adore their afternoon tea cream, and this is one recipe to impress all your guests. Homemade goodies can never be beaten, that's for sure. I like using lemon in most of my baking, whether it's just lemon extract, zest or juice. One can never go wrong with it. It gives a fresh zesty flavour even to the most boring food. 2ff7e9595c
